Buffalo meat has a great taste!  Most people describe the taste of buffalo as very flavorful, with a sweeter and richer flavor than beef.  Bison is naturally lean, flavorful and tender and can be prepared much the same as beef.  Because it's so lean, buffalo needs to cook more slowly than beef--at a lower temperature for a longer period of time.


Buffalo meat is more expensive than beef per pound.  The value of buffalo meat is what you get in return.  When you purchase buffalo meat, you are making a nutritionally wise decision, as you get more protein and nutrients with fewer calories, cholesterol, and fat.  Bison is dense meat that tends to satisfy you more while eating less.


Our buffalo spend their lives on grass and hay.  Our buffalo are handled as little as possible.  They are not subjected to questionable drugs, chemicals or hormones.  Cascade Buffalo Ranch is a member of the National Bison Association that has a resolution opposing the use of these substances in the production of buffalo for meat.  As a result of this naturally healthy meat, no known allergic reactions to buffalo meat have ever been reported.


Research at North Dakota State University has shown that buffalo meat is a highly nutrient dense food because of the proportion of protein, fat, mineral and fatty acids to its caloric value.
